Pork Souvlaki

Serves: 4

Cooking Time: 20 minutes

Ingredients:

Quantity Ingredient
600 g Mt Mercer Pork Leg, diced
2 Lemons zested & juiced
4 cloves Garlic, finely chopped
2 tblsp Mint leaves, finely chopped
¼ cup Olive oil
  Salt and pepper to taste
4 Souvlaki breads
1 cup Shredded ice berg lettuce
2 Tomatoes, diced
1 Purple onion, finely sliced
120 g Yoghurt and garlic dip
  Chopped parsley to garnish

 

Method: Pre-heat oven to 160°C
  1. Combine the lemon juice and zest, garlic, mint leaves, olive oil and salt and pepper in a shallow non-metallic bowl and whisk well.

  2. Add the pork to the marinade and marinate for several hours in the refrigerator.

  3. To cook pork: heat frying pan over a medium heat 2 minutes, add the diced pork to the pan and cook stirring 4 minutes. Rest 1 minute prior to serving.

  4. To serve: warm the pita bread in the pan or under a grill. Top pita bread with lettuce, tomato, onion, pork, garlic yoghurt sauce and finally garnish with chopped parsley.
Notes: pork souvlaki is also delicious served with apple sauce and mint yoghurt.
